Arborio Rice Salad Recipe

Ingredients:
1 tsp: Dijon mustard,
1 tsp: Salt,
2 tsp: Red wine vinegar,
6 tbsp: Olive oil,
1 cup: Arborio rice,
8 cup: Water,
1 tbsp: Salt,
1/2 cup: Swiss cheese, diced
1/4 cup: Black olives, diced
1/4 cup: Green olives, diced
1/4 cup: Green peppers, diced
Directions:
Whisk together first 4 ingredients and set aside. Boil rice in water
and salt for 10-12 minutes. Drain and rinse well. Toss with dressing
and remaining ingredients. Rest at room temperature for awhile before
serving.
