Ingredients:
3/4 cup: Italian black olives, pitted
1/4 cup: Capers, drained
1/4 cup: Anchovy fillets,
1/4 cup: Extra virgin olive oil,
4 tbsp: Lemon juice, fresh squeezed

Directions:
In food processor or blender, mix all ingredients together to obtain a
smooth spread, about 10 seconds. Serve this olive paste "peasant
caviar" in a bowl as a side dish to be spread on rustic Italian bread
for picnics, barbecues, or a buffet appetizer. Chefs tip: to pit,
place olive on a board and press with a knife blade. The pit should
easily be removed with your fingers.
