Pork Roast Salsa Recipe

Yield: 1 1/2 cups

Ingredients:
-JUDI M. PHELPS,
1 small: Can pineapple rings, drained
2 tbsp: Red bell pepper, diced
3: Green onions, sliced fine lengthwise
1/4 tsp: Ground ginger,
1 ounce: Lemon juice,
1 ounce: Tequila,
1 tbsp: Fresh mint leaves, chopped

Directions:
Cut pineapple rings into 1/4-inch pieces. Mix with all other
ingredients. Chill very well. Serve with pork roast.

Judis Notes: This tastes so much better with fresh pineapple. I
added a fresh peach to it and it turned out very well.
