Green Olive-cucumber Salad Recipe

Ingredients:
1 package: Lime-flavored gelatin, 3oz.
1 cup: Water, hot
1/2 cup: Water, cold
1 tsp: Lemon juice,
1 tsp: Lemon rind, grated
1 tsp: Onion, grated
1/2 tsp: Salt,
1 medium: Cucumber, peeled and chopped
1/3 cup: Green olives, onion-stuffed
Directions:
Dissolve gelatin in hot water. Add cold water, lemon juice, lemon
rind, onion, and salt. Chill until slighlty thickened. Fold in
cucumber and olives. Pour into a 1-quart mold and chill until firm.
