Herbed Mashed Sweet Potatoes Recipe

Ingredients:
2 lbs: Sweet potatoes, About 4 med
1 1/2 tbsp: Butter,
1 tbsp: Low-fat milk,
4 tbsp: Snipped chives,
1 1/2 tsp: To 2 tsp minced fresh thyme,
, Or 1/2 tsp dried thyme
Salt and fresh grd pepper to,

Directions:
Preheat oven to 400 degree F. Wash sweet potatoes and prick in several
places with a fork Place potatoes on a cookie sheet and bake far
about 1 hour, or until they feel soft when squeezed. Holding them
with a cloth, cut them in half and remove skin. Put flesh into a
large bowl and mash well with butter. buyer. Add milk, herbs, salt
and pepper.
Transfer to a casserole dish and, if necessary, reheat briefly in the
oven or microwave. May be prepared in advance and reheated just
before serving. Makes 4-6 servings.
