Irish Oatmeal With Dried Fruit & Honey - Ma Recipe

Ingredients:
2 cup: Apple cider or juice,
1: Cinnamon stick,
1/4 tsp: Salt,
1 cup: Irish oatmeal,
5 ounce: Dried peach, apricot, and pear halves in any combination, cut into 3/8 inch dice, about 1 C
Honey or dark-brown sugar,
1/2 cup: Low-fat milk, warmed
Directions:
1. In a heavy saucepan, bring 2 C water, the apple cider, cinnamon
stick, and salt to a boil. Add oatmeal, stir until smooth, and return
to a boil. Lower heat and simmer, stirring occasionally, for about 30
minutes.
2. Remove saucepan from heat. Discard the cinnamon stick and stir in
all but about 1/4 C of the dried fruit.
3. Divide oatmeal among 4 bowls and top with honey, if desired.
Garnish with remaining fruit; serve with warm milk.
