Italian Pepper Sausage Recipe

Ingredients:
4 1/2 lbs: Course ground pork,
1 1/2 lbs: Salt pork,
1 Clove: garlic,
1: Onion, quartered
1 1/2 tbsp: Freshly ground black pepper,
2 tbsp: Salt,
4 tbsp: Paprika,
4 tsp: Fennel,
2 tbsp: Crushed red pepper, dried
1/4 tsp: Thyme,
1/2 tsp: Bay leaf, crushed
1/2 tsp: Coriander,
1 cup: Red wine,
Directions:
Combine all ingredients, mix well and stuff into hog casing. You may
split lengthwise and broil under medium heat, or pan fry until brown
on all sides and well done.
