Wild Rice & Spam Recipe

Ingredients:
12 ounce: Spam,
2 cup: Cooked wild rice,
1/2 cup: Chopped carrots,
1/2 cup: Chopped pecans,
1 medium: Yellow pepper, chopped
1/2 cup: Raisins,
Sherry chive vinaigrette,
Lettuce cups, if desired
VINAIGRETTE
1/3 cup: Oil,
2 tbsp: Sherry,
1 Clove: garlic,
1 tbsp: Chopped parsely,
1/3 cup: Snipped chives,
1/4 tsp: Black pepper,
Directions:
Combine all ingredients except lettuce cups. Cover and refrigerate
four hours or overnight. Serve in lettuce cups if desired. For the
vinaigrette: combine all ingredients in a food processor and blend
until minced.
