Kletsky- Apple Dumplings #002 Recipe

Ingredients:
4 each: Apples, medium, peeled cored finely chopped
6 tbsp: Lemon juice fresh,
2 tbsp: Lemon rind grated,
1/2 cup: Sugar,
2 each: Eggs beatne lightly,
1 1/2 cup: Fine berad crumbs,
Directions:
Pour lemon juice over the apples then squeezed them dry. Mix the
lemon rind into the apples, sugar, egg, & bread crumbs. Chil in
refrigerator for 30 minutes. remove from refrigerator and make
walnut-sized balls. In a large pot of lightly, salted, boiling water
drop the balls. Boil until they rise to the surface. Use a slotted
spoon to remove them from the boiling water. Allow them to drain and
cool to room temperature. These dumplings may be eaten dusted with
powdered sugar, added to a fruit soup, or "as-is" as you desire.
