Mamas Roll Cake Recipe

Ingredients:
5: Eggs,
2/3 cup: Sugar,
1/4 t: Salt,
1/2 cup: Sifted cake flour,
3 T: Melted butter,
1 t: Vanilla,
1 cup: Jam, jelly or other filling
Directions:
Combine eggs and sugar and beat until blended. Place over hot water
and heat until mixture is slightly hot (140
). Remove from heat and
beat until mixture holds a soft peak. Combine salt and flour and fold
into egg mixture. Fold in butter, a tablespoon at a time. Blend in
vanilla. Pour into a large (10X15 inch) pan lined with paper. Bake in
moderate oven (350
F) 15 to 20 minutes. Turn quickly onto a towel
sprinkled with confectioners sugar, remove paper and trim off
crusts. Spread quickly with slightly whipped jam or jelly, or other
filling, roll and cool; or roll cake while hot and when cold, unroll
and spread with filling and roll. Just before serving sprinkle cake
with confectioners sugar.
