Easy Chocolate Mousse Parfait Recipe

1 cup: Semisweet chocolate morsels,
2 cup: Ricotta cheese,
2/3 cup: Heavy cream,
3 tbsp: Sugar,
1 tsp: Vanilla extract,
1/2 tsp: Cinnamon,
pn Salt,
Semisweet chocolate morsels, for garnish
Fresh raspberries, garnish
Directions:
In top of a double boiler set over simmering (not
boiling) water, melt chocolate morsels, stirring
occasionally. Remove chocolate from heat. Cool to
lukewarm. In blender or food processor fitted with
metal blade, process ricotta until very smooth. Add
cream, sugar, vanilla, cinnamon, and salt; pulse to
combine. Add melted chocolate to ricotta mixture;
process until smooth. Scrape down side of bowl; pulse
2 or 3 times, until well blended. Spoon mousse into
dessert bowls or wineglasses. Cover and refrigerate
mousse for at least 2 hrs., or up to 3 days. Garnish
with chocolate morsels and raspberries just before
serving.
