Island Sweet Potato Pudding Recipe

Ingredients:
12 ounce: Cooked sweet potatoes,
2 tsp: Reduced calorie margarine,
-peeled and cut in chunks,
1/4 tsp: Ground nutmeg,
1 medium: Ripe banana, mashed
1 tsp: Rum extract,
3 tsp: Brown sugar, firmly packed
1: Egg white,
2 tbsp: Reduced calorie margarine, +

Directions:
Preheat oven to 350. In a large bowl, beat all ingredients except egg white
until smooth. Add a small amount of water if necessary, to get a smooth
consistency. Beat egg white until stiff. Fold gently into sweet potato
mixture. Spoon into a casserole that has been sprayed with a nonstick
cooking srpay. Bake, uncovered, 45 to 50 minutes, until lightly browned.

calories.
