Timbale Eggs Recipe

Ingredients:
1 tbsp: Olive oil,
1 each: Clove gresh garlic, minced, or 1 tsp bottled minced garlic
1 tbsp: Finely minced chives,
1 small: Onion, chopped
1/4 tsp: Salt,
Freshly ground pepper to taste,
1 tbsp: Minced cilantro,
3 tbsp: Tomato sauce,
1/4 tsp: Red pepper,
4 large: Eggs,
Directions:
Preheat oven to 350F. Heat oil in wok or large skillet. Add garlic,
chives and onion. Saute 2 minutes. Add salt and pepper, cilantro,
tomato sauce and red pepper. Stir until well mixed. Remove from
heat. In a separate bowl, beat eggs slightly. Pour sauce in with
eggs, and stir until blended. Pour equal portions into individual
greased custard cups. Bake in oven for 20-25 minutes or until set.
