Lower-fat Curried Tofu Salad Recipe

Ingredients:
5 ounce: Silken tofu,
1 tsp: Lemon juice,
4 tsp: Dried minced onion,
2 tbsp: Or 3 tb curry powder,
1/2 tsp: Paprika,
1 lbs: Firm tofu, mashed lightly or cut into cubes or slivers
2 cup: Chopped vegetables, * such as carrots, radishes, peas, celery,
PER 1 CUP SERVING

*mg calcium,
*mg iron,
*mg sodium,
*gm fiber,
Directions:
In food processor or blender, combine silken tofu and lemon juice. Process
until smooth. In large bowl, combine all ingredients. Cover and
refrigerate several hours or overnight.
