Lowfat Chipotle Mashed Potatoes Recipe

Ingredients:
5 medium: Potatoes, scrubbed,skins on
2 centiliter: Garlic cloves, minced (more or less to taste)
2: Chipotle chiles in adobo sauce, pureed, (more or less

Skim milk,
Salt,

Directions:
Place potatoes on a steamer rack in a pressure cooker along with @ 1/2 cup
of water (see note below). Lock lid in place & bring to high pressure.
Cook for 11 minutes & let pressure release normally. Unlock lid & place
potatoes in mixer bowl along with minced garlic & pureed chipotles. Mix
on low speed until potatoes are broken up. With mixer running, add enough
skim milk to thin the mixture to a smooth consistancy. Stop mixer.
Season to taste with salt & Molly McButter.
For a creamy mashed potato, mix 1/2 cup nonfat cottage cheese into the
potatoes.
If you dont have a pressure cooker, the potatoes can be boiled inwater
until tender when pierced with a fork.
For a smoother consistancy, the potatoes can be peeled prior to cooking.
NOTE: refer to the owners manual of your pressure cooker. Some cookers
require more water to come to pressure.
