Split Pea Puree Recipe

Ingredients:
1/4 cup: Olive oil,
1 3/4 cup: Split peas, about 12 ozs.
1 cup: Onion, chopped
Capers,
6 1/2 cup: Water,
Directions:
Heat oil in a large Dutch oven over medium heat, add chopped onion.
Saute 5 minutes, add water and split peas. Bring to boil and then
reduce heat. Cover and simmer until peas are very soft and falling
apart, about 1 hour. Uncover and simmer until reduced to abpout 4
cups, stirring often, about 1 hour. Season with salt & pepper. Serve
warm or room temperature. Top with capers or crumbled feta cheese.
