Zucchini With Parmesan Cheese (microwave) Recipe

Ingredients:
1 3/4 lbs: Very thinly sliced zucchini,
1 each: Lemon, squeezed for juice
3 tbsp: Roast chicken cooking liquid or chicken stock,
1 1/2 tbsp: Garlic powder,
Salt & pepper,
2 tbsp: Butter,
1/4 cup: Grated Parmesan cheese,
Directions:
Put the zucchini in a dish and pour the lemon juice and the chicken
cooking juice (or stock) over. Sprinkle with garlic powder and
season with salt and pepper. Cover and microwave on HIGH for 8
minutes. Leave to stand for 3 minutes.
Transfer the zucchini to a serving dish. Add the butter and Parmesan
cheese. Stir and serve hot.
Note: The author recommends serving this dish with Roast Chicken, but
notes that it is good with (and can use the juices of) any roast meat.
