Lemon Chess Pie > Southern Living Recipe

Ingredients:
3 each: Eggs,
1 tbsp: Cornmeal,
1 cup: Sugar,
1 tbsp: Lemon juice, fresh squeezed
1/2 cup: Syrup, light corn
1/2 tsp: Vanilla extract,
1/3 cup: Margarine, melted
1 each: Pie shell, 9", unbaked
1/3 cup: Sour cream,
1/3 cup: Coconut, flakes, opt.
Directions:
Beat eggs and sugar in mixing bowl. Add corn syrup, melted
margarine, sour cream, cornmeal, lemon juice, and vanilla. Blend
thoroughly. Pour into pastry shell. Sprinkle with coconut. Bake at
350 degrees for 45 to 50 minutes or until almost set.
