Spicy Apple Pancakes With Cider Sauce Recipe

Ingredients:
2 cup: Biscuit mix,
1 1/3 cup: Milk,
1/2 tsp: Ground cinnamon,
3/4 cup: Apple, shredded (about 1
1 each: Egg, beaten
-medium apple),

CIDER SAUCE
1/2 cup: Sugar,
1 cup: Apple cider,
1 tbsp: Cornstarch,
1 tbsp: Lemon juice,
1/8 tsp: Cinnamon,
2 tbsp: Butter or margarine,
1/8 tsp: Ground nutmeg,

Directions:
Combine biscuit mix and cinnamon in a bowl. Combine egg and milk;
stir into dry ingredients until smooth. Stir in shredded apple.
For each pancake; spoon about 1/4 cup batter onto a hot lightly
greased griddle. Turn pancakes when tops are covered with bubbles
and edges are brown. Serve with Cider Sauce. Yield: 13 (4-inch)
pancakes.

CIDER SAUCE:
Combine first 4 ingredients in a heavy saucepan; gradually add
apple cider and lemon juice. Cook over medium heat, stirring
constantly, until mixture boils. Cook 1 minute, stirring constantly.
Remove from heat, stir in butter. Yield; 1-1/4 cups.
