Cottage Cheese Pancakes (latkes) Recipe

Ingredients:
1 cup: Cottage Cheese,
1/2 t: Sugar,
2 each: Eggs, separated
1/4 t: Salt,
1 1/2 each: Tb Cornstarch,
Directions:
Blend the cottage cheese, egg yolks, cornstarch, sugar and salt. Beat
the egg whites until stiff and fold into the cottage cheese mixture.
Drop by tablespoons on a hot, greased griddle. Lower heat and cook on
one side until puffed and dry. Then turn with a spatula and brown
lightly on the other side. Serve with fruit, berries, sour cream, or
