Marinated Spam Vegetable Salad Recipe

Ingredients:
1 can: SPAM Luncheon Meat, cut into
1 cup: Chopped celery,
-strips, 12 oz
1: Onion, chopped
1 lbs: Broccoli, broken into
1/2 cup: Chopped red bell pepper,
-flowerets,
1 1/2 cup: Olive oil,
1 Head: cauliflower, broken
1 cup: Sugar,
-into flowerets,
1/2 cup: Vinegar,
2 cup: Cooked rotini,
1/4 cup: Chopped fresh parsley,
1 cup: Mushrooms, sliced
2 t: Dry mustard,
Directions:
In skillet, saute SPAM over medium heat until lightly browned. In
large bowl, combine broccoli, SPAM, cauliflower, rotini, mushrooms,
celery, onion, and bell pepper. In small bowl, combine oil, sugar,
vinegar, parsley, and dry mustard; mix well. Toss dressing with SPAM
mixture. Cover and chill 4 hours or overnight.
