Zucchini Latkes Recipe

Ingredients:
2 medium: Zucchini, shredded
2 tbsp: Wheat germ or matzo meal,
5 tbsp: Whole wheat flour, sifted, up to 6
3 large: Eggs, well beaten
1/2 tsp: Salt, or to taste
Generous pinch of pepper,
2 Cloves: garlic, minced, -or-
1/4 tsp: Garlic powder,
Oil, for frying

Directions:

Combine all ingredients, mixing well. Drop by tablespoonful into hot oil
in a skillet and fry on both sides until golden brown. Yields 10-12
latkes.
