Calypso Bread Recipe

Ingredients:

1 1/2 LB LOAF
1 package: Red Star active dry yeast,
3 cup: Bread flour,
1/4 cup: Sugar,
1 1/2 tsp: Salt,
2 tsp: Instant coffee,
1/2 tsp: Ginger,
1/4 cup: Milk, 80=F8
1/4 cup: Water, 80=F8
2 tbsp: Oil, 80=F8
1/2 cup: Eggs, (2) (room temperature)
1/2 cup: Mashed bananas,
1/3 cup: Chopped walnuts,

1 LB LOAF
1 1/2 tsp: Red Star active dry yeast,
2 cup: Bread flour,
3 tbsp: Sugar,
1 tsp: Salt,
1 1/2 tsp: Instant coffee,
1/4 tsp: Ginger,
1/4 cup: Milk, 80=F8
1/4 cup: Water, 80=F8
1/4 cup: Eggs, (1) (room temperature)
1/3 cup: Mashed bananas,
1/4 cup: Chopped walnuts,

Directions:
Place ingredients into pan in the order suggested by the machines manual.
Use the sweet bread or regular bread cycle.

An interesting bread with flavors popular in the Caribbean: ginger, coffee
and banana.
