Chickpea And Sweet Potato Koftas Recipe

Ingredients:
1 Medium-sized: sweet potato,
2 cup: Cooked chickpeas, (1 15oz can)
2: Scallions, cut in 1 inch pieces
1 tsp: Cumin,
1 tsp: Ginger,
1 tsp: Salt,
2 tbsp: Lemon juice,
Black pepper, to taste
6 tbsp: Flour,
1 cup: Peas, (fresh or frozen)
Oil for frying,

Peel and cube the sweet potato and steam, boil or microwave it. Put all the
ingredients except the flour and peas into a food processor and puree. Mix
in the flour and add the peas. Form patties and fry on both sides till
golden brown.

They really look very pretty when done - all orange with green peeking out!
