Crepes - Raratouille Filling [d] Recipe

Ingredients:
400 gram: Tomatoes, canned, chopped.
2: Onions, peeled and chopped.
1 small: Courgette, sliced.
1: Capsicum, green deseeded and sliced.
1: Garlic cloves, or two, crushed.
1 pinch: Mixed herbs,
Salt,
Black pepper, freshly ground.
1/2 cup: Cheese, cheddar, low-fat, grated.

Directions:
Put all the ingredients except the cheese in a saucepan and simmer for 10
minutes, seasoning to taste with salt and freshly ground black pepper.
Fill the pancakes with the ratatouille- putting 2-3 tbs of it in the middle
of each pancake- then roll them up and put them in an ovenproof dish.
Sprinkle the cheese over them and bake for 10 minutes ay 350^F/180^C.
