Mexican Meat Loaf Recipe

Ingredients:
1/2 lbs: Lean ground beef,
1 Jar: , (8-ounce) mild tomato salsa
1 tsp: Ground cumin,
1/2 cup: Frozen corn,
1/2 cup: Frozen, diced green peppers
1/2 cup: Plain bread crumbs,
Salt and pepper,

Directions:
Preheat oven to 450 degrees. Line a baking sheet with foil. Mix all
ingredients. Divide mixture in half and place each half on baking sheet.
Shape into 2 loaves about 6 inches by 3 inches. Bake for 20 minutes. Remove
from oven and serve with Jalapeno Mashed Potatoes (recipe follows). Makes 2
servings.
