Orzo And Artichoke Salad Ala Souplantation Recipe

Ingredients:
2 cup: Cooked orzo, still warm
1/2 cup: Water-packed artichoke hearts, chopped
2 tbsp: Lowfat Italian salad dressing, spicy with parmesan
Directions:
Combine while orzo is still warm. cover and refrigerate. Serve chilled, not
cold.
Variations:
1. add finely chopped softened sun-dried tomatoes.
2. Use a different dressing: lowfat Roasted Garlic Caesar (creamy). --pat
