Papaya-tomatillo Salsa Recipe

Ingredients:
1 large: Papaya, peeled, seeded and diced
3: Tomatillos, husks removed, diced
1/4 cup: Diced red pepper,
1/4 cup: Diced scallion,
1: Garlic clove, minced
2: Serrano chiles, minced
1/4 cup: Fresh squeezed lime juice,
3 tbsp: Olive oil,
Salt,
3 tbsp: Chopped cilantro,
Directions:
Combine ingredients in a bowl and toss. Cover and refrigerate 30 minutes
before serving for flavors to meld.
