Fresh Tomato And Garlic Soup With Parmesan Toast Recipe

Ingredients:
6 large: (about 1.5kg) tomatoes, peeled & s, eeded
20 gm: butter,
2 medium: onions (about 300g), finely choppe, d
4 cloves: garlic, crushed,
1 teaspoon: grated fresh ginger,
2 tablespoon: plain flour,
2 cup: chicken stock,
1 tablespoon: tomato paste,
2 teaspoon: sugar,
1 teaspoon: chopped fresh oregano,
1 teaspoon: chopped fresh thyme,
2 tablespoon: chopped fresh parsley,

PARMESAN TOAST
1 small: french bread stick,
60 gm: butter, softened,
1/2 cup: grated parmesan cheese,

Directions:
Blend or process tomatoes until smooth. Heat butter in pan, add
onions, garlic and ginger, cook, stirring, until onions are soft. Add
flour, stir until combined. Remove from heat, gradually stir in
tomatoes, stock, paste and sugar, simmer, uncovered, about 15 mins or
until slightly thickened; stir in herbs. Serve with parmesan toast.

Parmesan Toast: Cut bread into 3cm slices. Combine butter and
cheese in bowl, spread mixture evenly over bread, grill until cheese
is melted.
