Hearty Lentil Soup Recipe

Ingredients:
2 tablespoon: vegetable oil,
1 cup: chopped celery,
1 cup: chopped carrots,
3/4 cup: chopped onion,
2 large: cloves garlic, minced,
1 can: swanson clear chicken broth 49-1/2, oz can
1 1/2 cup: dry lentils, rinsed,
1 medium: bay leaf,
1/2 teaspoon: grated lemon peel,
1/8 teaspoon: ground red pepper (opt.),
Directions:
In 4-quart saucepan over medium heat, in hot oil, cook celery,
carrots and onion with garlic until vegetables are tender.
Add remaining ingredients. Heat to boiling. Reduce heat to low.
Cover; simmer 1 hour or until lentils are tender. Remove bay leaf.
Makes 7-1/2 cups.
