Jamon Serrano With Melon Recipe

Ingredients:
1: fresh, ripe melon
12: thin slices of jamon serrano,
1: carrot, grated
juice of 1 lemon,
1: scallion, finely chopped
8 tbsp: olive oil,
6 tbsp: of sherry vinegar,
salt & fresh ground pepper,
Directions:
Cut melon in half, scoop into balls with a teaspoon or melon baller.
Mix in bowl with oil, lemon juice, vinegar and salt and pepper.
Add the carrot and scallion, mix thoroughly and chill for 2 hours.
Shape ham slices into cones and serve with melon.
An elegant appetizer or party dish.
