2 cup: diced unpeeled zucchini,
1/2 cup: washed watercress leaves,
1/2 cup: peeled and chopped potato,
3: parsley sprigs,
1/2 teaspoon: tabasco pepper sauce,
1: plain yogurt or sour cream,

Directions:
Here is a wonderful zucchini soup that gives welcome relief in the
hot and humid Louisiana summers. Its a velvety-smooth soup with no
cream, so its easy on the calories, but it tastes like an indulgance.
