Ingredients:
1 lbs: Alligator meat, chop
1: Egg,
1 tbsp: Onion, chop fine
2 tbsp: Celery, chop fine
1 tbsp: Parsley, chop fine
2 tbsp: Shallots, chop fine
2 tsp: Lemon pepper,
1/2 tsp: Salt,
1/4 cup: Bread crumbs,
Flour to dredge,
1 cup: Cooking oil,

Directions:

Mix all ingredients, form into 1" balls. Allow to set for 1 hour.
Dredge with flour and fry until brown. Serve hot. Source: Louisiana
