Nicely Spiced Pork Loin Recipe

Ingredients:
4 Cloves: garlic, minced
1 tsp: Salt,
2 tbsp: Vegetable oil,
2 tbsp: Lemon juice,
1 tbsp: Paprika,
2 tsp: Each ground cumin and coriander,
1 tsp: Ginger,
1/4 tsp: Cinnamon,
1: Boneless pork loin roast,
, about 4 lb.
Directions:
In bowl, mash garlic with salt; mix in oil, lemon juice, paprika,
cumin, coriander, ginger and cinnamon.
Cut 1 inch deep slits all over top and sides of pork; rub paste all
over roast. Roast on roasting rack in pan in 325
F oven for about 1
hour and 45 minutes or until meat thermometer registers 160
F.
Transfer to platter and tent with foil. Let stand for 10 minutes
