Roasted Beet Salad Recipe

Ingredients:
2 bunch: baby beets,, roasted
1 lbs: mesclun or mixed greens,
1/2 cup: toasted walnuts,
1: shallot,, chopped
3 tbsp: walnut oil,
2 tsp: raspberry vinegar,
1/4 lbs: goat cheese,
Directions:
: Salt
: Pepper
Cut off beet tops. In a large serving bowl, toss beet tops with mixed
greens and walnuts. Add beets to salad. In a skillet, saute shallot in
walnut oil. Deglaze with vinegar. Pour this dressing over salad and
toss. Sprinkle top with goat cheese. Season with salt and pepper and
serve immediately.
