Drop Doughnuts (kh) Recipe

Ingredients:
4: Eggs,
3 cup: All-purpose flour,
1 cup: Buttermilk,
1 1/2 tsp: Baking powder,
2 tsp: Vanilla extract,
Cooking oil for deep frying,
1 tsp: Grated lemon or orange peel,

Directions:
Beat eggs; stir in buttermilk, vanilla extract, and grated peel.
Combine flour and baking powder. Stir into the egg mixture. Cover
with a cloth. Let stand at room temperature for 1 hour. In a deep
fryer, heat oil to 375 F. Drop batter by the tablespoon. Cook 4
minutes, or until doughnuts are golden brown. Drain on paper towels.
Drizzle with honey and sprinkle with cinnamon. Serve hot.

Note: Batter keeps well in the refrigerator. Bring to room temperature
before cooking.
