Southwestern Chicken Salad Recipe

Ingredients:
1 package: Perdue Fit n Easy Chicken,
Tenders,
2 tbsp: Olive oil, divided
Salt, to taste
Pepper, to taste
1/2 cup: Fresh lime juice,
1 small: Red onion,
1/4 cup: Fresh cilantro,
1/2 each: Jalapeno pepper, seeded
2 cup: Cantaloupe, dried, ripe
1 large: Avocado, peeled/seeded/dic
1 cup: Apple, peeled and diced
1 Head: Romaine lettuce,
Directions:
Brush chicken with 1 tablespoon oil and sprinkle lightly with salt
and pepper. Grill or broil 6-8 inches from heat source for 2-3
minutes perside until cooked through. Dice and reserve. In a food
processor combine lime juice, onion, cilantro, and jalapeno. Process
until finely chopped. Gradually add oil with machine running. Season
to taste with salt and pepper. In a salad bowl toss chicken, melon,
avocado and jicama with dressing. Serve on a bed of Romaine lettuce
leaves.
