Special Cornbread Recipe

Ingredients:
1 cup: Cornmeal,
1/4 cup: All purpose flour,
2 tsp: Baking powder,
1/4 tsp: Sugar,
1/4 tsp: Baking soda,
1 tsp: Salt,
14 1/2 ounce: Whole tomatoes, undrained
1 Medium: onion, chopped
1: Egg, beaten
3 tbsp: Shortening, melted
Directions:
Combine dry ingredients; add tomatoes, onion, eggs and shortening,
mixing well. Be sure to chop tomatoes before adding. Heat iron
skillet in 400 degree oven until very hot, pour in the batter, and
bake at 400 for 30 minutes or until brown.
