Spicy Tofu-bell Pepper Supreme Recipe

Ingredients:
2 tbsp: Olive oil, extra virgin OR
2 tbsp: Vegetable stock,
1 1/2 cup: Bell peppers, mixed green and red, diced
3/4 cup: Onions, yellow, cubed
1 1/4 cup: Salsa, tomato mild
1/2 cup: Olives, black, pitted
1 1/2 cup: Garbanzo beans, canned, drained
1 cup: Tofu, baked, cubed
1/8 tsp: Salt,
1/8 tsp: Pepper,
Directions:
Combine the oil, peppers, and onion in a saucepan and cook over high
heat for 5 to 8 minuts. Reduce the heat and add the remaining
ingredients. Cook over medium heat for 10 minutes. Serve with Fresh
Corn Salad or brown rice.
