Giardiniera (pickled Vegetables) Recipe

Ingredients:
2: Carrots, peeled and sliced diagonally
1: Celery stalk, sliced diagonally
2 cup: Cauliflower, cut into small chunks
1/2: Red pepper, quartered and sliced
1: Green onion, sliced
1 Clove: garlic, sliced
1 cup: White vinegar,
1/2 cup: Dry white wine,
1/4 cup: Water,
1/4 cup: Apple juice,
2 tsp: Salt, omit for low-sodium diets
8: Peppercorns,
1 tsp: Dried dill weed,
Directions:
Mix all the ingredients and refrigerate in a closed jar for two days.
