Ginger Muffins Recipe

Yield: 24 Muffins

Ingredients:
1/2 cup: Shortening,
1/2 cup: Sugar,
1: Egg,
1 cup: Molasses, light preferably
3 cup: All-purpose flour,
1 1/2 tsp: Soda,
1/2 tsp: Salt,
1 tsp: Cinnamon,
1 tsp: Ginger,
1/2 tsp: Ground cloves,
1 cup: Hot water,

Directions:
Cream together shortening and sugar. Beat in the egg, then the
molasses. Sift together the dry ingredients; stir into molasses
mixture. Gradually add the hot water, beating until smooth.

Line muffin pans with paper baking cups. Fill 2/3 full. Bake at 350
degrees for 20-25 minutes or till done. Touch lightly with finger -
done if it bounces back.

NOTE: My extra special muffins!
