Stuffed Potato Skins Recipe

Ingredients:
1/2 lbs: Beef, ground
3/4 cup: Jack cheese, shredded
1/2 cup: Ranch dressing,
1/4 cup: Olives, ripe and sliced
1 tbsp: Green chiles, chopped
16: Potato skin quarters, cooked
Directions:
In a medium bowl stir together the beef, 1/2 cup of the cheese, ranch
dressing, olives and green chiles until well blended. Using a spoon,
put approximately 2 T filling on each potato skin. Sprinkle potato
skins with the remaining 1/4 cup cheese. Broil 6" from heat for 3 to
5 minutes or until hot and cheese is melted. Makes 16
