Ingredients:
1 lbs: Fine oatmeal,
1 lbs: Flour,
1 lbs: Demerara su,
2 ounce: Candied peel,
3/4 lbs: Butter,
2 tsp: Baking powder,
1 tsp: Ground ginger,
1 tsp: Coriander seeds,
1 tsp: Salt,
1 lbs: Warmed black treacle,
Directions:
Set oven to 350/F or Mark 4. Mix all the dry ingredients together in a
bowl, rub in the butter and add the treacle. Knead together and roll
out fairly thinly on a floured sur face. Cut into large rounds, place
on a greased baking tray and bake until golden; about 20 minutes. The
actual cooking time depends on the thickness and the size of the
cakes.
