Warys Bean Tarts Recipe

Ingredients:
1 cup: Cooked great northern or,
Pinto beans,
2 large: Eggs,
1 cup: Butter or margarine,
1 cup: Packed brown sugar,
1 cup: Light Corn syrup,
1 tsp: Vanilla extract,
1 tsp: Ground nutmeg,
Currants,
24: Prepared 3-inch tart shells,
Directions:
Mash or puree beans. Beat eggs; add to beans. Add the next five
ingredients and beat well. Place a few currants in each shell. Pour
in the filling. Bake at 350 for 20 minutes or until nicely brown.
(Variations: Maple flavoring can be substituted for vanilla extract,
and pecans or walnut for currants.)
