White Wine-marinated Squid Recipe

Ingredients:
3/4 cup: White wine,
1/4 cup: Lemon juice,
1/4 cup: Olive oil,
2 tbsp: Minced garlic,
1/4 cup: Minced onions,
1 tsp: White pepper,
1/2 tsp: Ground coriander,
2 tsp: Salt,
1 1/2 cup: Squid, body cut into rounds, tentacles left whole

Directions:
PLACE ALL INGREDIENTS except squid in a 1-quart pot and bring to a
boil over high heat on the stove. Add the squid, cook 30 seconds and
immediately remove from the heat. Pour the contents of the pot into a
glass bowl, cover with a plate and let cool to room temperature.
Place in refrigerator until chilled. Serve over lettuce or chilled
pasta.
