Sunbeam Cheese Cake Recipe

Ingredients:

CRUST
1 1/3 cup: Graham cracker crumbs,
1/2 cup: Melted butter or margarine,
1/3 cup: Granulated sugar,
1/2 tsp: Cinnamon,

FILLING
3 each: Eggs,
1/3 cup: Sugar,
1 1/2 tsp: Vanilla,
2 tsp: Grated lemon rind,
19 ounce: Cream cheese, room temp

TOPPING
1 cup: Commercial sour cream, to 2 cups
2 tbsp: Sugar,
1 tsp: Vanilla,

Directions:
CRUST: Combine graham cracker crumbs, melted butter or margarine,
sugar and cinnamon in mixing bowl. Blend well. Pour into cold frypan
and press mixture firmly to cover bottom and form a small rim at
sides.

FILLING: Combine eggs, sugar, vanilla and lemon rind in small mixer
bowl. Beat on medium speed for 1 minute. Add cream cheese, a small
about at a time while beating each time until blended. After all has
been added, beat 1/2 minute longer. Pour into crust, spreading
evenly. Cover, close vent. Bake at 260 degrees F until set, about 20
minutes.

TOPPING: Combine ingredients, beat with a fork until blended and
spread over cheese mixture. Cover, bake 5 minutes longer. Cool. Cut
into desired servings.
