Almond Custard Recipe

Ingredients:
1: Gelatin, unflavored
1/4 cup: Water, plus
2 tbsp: Water,
1 1/4 cup: Vanilla yogurt, lowfat
1/2 cup: Sugar,
1/2 cup: Frozen egg substitute, thawed
1/2 tsp: Almond extract,
2 tbsp: Almonds, chopped and toasted

Sprinkle gelatin over water in a saucepan; let stand for 1 minute.
Cook over low heat, stirring until gelatin dissolves. Combine yogurt,
sugar, egg substitute and almond extract in the container of a blender or
food processor. Cover and process until smooth. Gradually add gelatin
mixture; cover and process until well blended. Pour into 6 ounce custard
cups. Chill until set. Sprinkle each with 1 teaspoon chopped almonds.
