Apricot Vinaigrette Recipe

Ingredients:
A TASTY NON-FAT SALAD DRESSI
COOKBOOK BY PAT BAIRD AND UP
1 can: , (@12 oz) apricot nectar
3 T: Cornstarch,
3 T: Cider vinegar,
1/2 tsp: Ground coriander,
1/2 tsp: Dry mustard,
Directions:
Thoroughly mix the cornstarch with about 1/2 cup of the apricot nectar.
Add the remainder of the nectar & stir thoroughly. Heat (stovetop or
microwave) mixture & cook until thickened, stirring frequently. Let
mixture cool & add rest of ingredients. The flavor is enhanced by
adding chopped fresh herbs of your choice such as basil, thyme,
marjoram, sage, etc. This recipe can easily be changed by using a
different flavor of nectar.
