Beans In A Flask Recipe

Ingredients:
1 lbs: Shelled fresh beans*,
1/2 cup: Olive oil,
Several sprigs fresh thyme,
Freshly ground black pepper,
2 Cloves: garlic,
1 Lg.: tomato, seeded,chopped
Directions:
*Try limas,favas,haricots,crowders.
This famous Tuscan dish is a quaint way to cook fresh white shelled beans.
To do it the traditional way, strip the straw covering from a Chianti
bottle. Fill the bottle with beans, olive oil and herbs. Bake it for 3
hours in a bed of charcoal ashes. The flavor of the smoke and oil perfumes
the delicate beans, which you can then use as part of an antipasto
arrangement. If you dont have a convenient bottle, you may use a casserole
dish. And if you dont have fresh beans, use dried ones that you have
soaked.
