Garlic Gravy (cesnekova Omacka)--czech Recipe

Ingredients:

Recipe via Meal-Master (tm) v8.05

Directions:
Melt 3 T. fat in skillet, add 3 T. flour; brown until a real dark brown.
Add 2 or 3 cloves garlic sliced, cook a few minutes longer, add 1 1/2 c.
beef broth or hot water. Cook until smooth. Add salt and pepper to taste.
Serve over boiled beef.

Title: Garlic Marinated Flank Steak

Yield: 4 servings

4 lg Cloves garlic, peeled and
Flattened
1 tb Dijon mustard
1/3 c Red wine vinegar
1 c Olive oil
1 ts Salt
1/2 ts Freshly ground black pepper
1 1/2 lb Flank or sirloin steak

Peel garlic and flatten by pressing down with the flat side of a broad
knife. Place in a jar with a tight fitting lid. Add remaining ingredients
except steak. Secure top and shake vigorously to blend dressing.

Score the steak at right angles to the grain of the meat, about 1/4-inch
deep on both sides.

Combine 1/2 cup dressing with steak in a plastic bag and secure with twist
tie. Marinate at least 20 minutes or up to 2 days in the refrigerator.

Broil flank about 3 inches from heat for 3 minutes on each side, or until
done to desired taste. Carve by slicing 1/4 inch thick across the grain.

Makes 4 servings
